What’s with all the bacon-infused vodka?

I’ve always said that the perfect glass of vodka is like a celebrity heiress: transparent, ice-cold, and tasteless.

But since most gastronomes have the idea–flawed or not–that food contains flavor compounds that are more soluble in alcohol-laden liquids like vodka than in water (e.g., adding vodka to Penne a la vodka ain’t so you can taste the vodka), the world is now riddled with infused hooch.
